That is what my daughter says to me now. She is seven and she has decided that the ONLY vegetable she likes is brocolli. So I am going to milk that for all it is worth.
She doesn't care how we have it: hot, cold, steamed, sauteed, roasted, covered in cheese. As long as it is brocolli she is a happy camper. But to turn it into a snack food that is chip worthy, I took inspiration from some friends.
Confessions of a Food Nerd Roasted Broccoli
1 lb fresh broccoli florettes (or frozen brocolli florettes, thawed)
1 Tbsp extra virgin olive oil
1/2 tsp salt
1/4 tsp red pepper flakes (optional)
2 cloves garlic, minced
2 Tbsp grated parmesan
Preheat oven to 400 degrees.
In a medium bowl, mix together all ingredients. Spread broccoli on to a cookie sheet. Bake in a 400 degree oven for 15 minutes. Stir broccoli. Bake for another 5 minutes or until parmesan has crisped and broccoli has started to carmelize (get brown in places). Serve.
